Rapid Fire Guide Q & A

What’s the biggest fish you’ve caught?
Capt. Anthony's fishing exploits have led him to encounter some of the ocean's most impressive and formidable creatures. Among these, a few standout catches have become legendary tales that highlight his skills and adventurous spirit. One of the most remarkable catches in Capt. Anthony's career is the 11-foot Blue Marlin. This majestic fish, known for its incredible size and strength, was a true test of his angling abilities. The encounter occurred during an offshore fishing expedition in the deep waters of the Atlantic. After a grueling battle that lasted several hours, Capt. Anthony managed to reel in the massive marlin, showcasing his determination and expertise. The Blue Marlin's shimmering, cobalt-blue body and long, spear-like bill made it a sight to behold, and the catch remains one of his proudest achievements. Another notable catch is the 350-pound mako shark. Known for their speed and agility, Mako sharks are among the ocean's most formidable predators. Capt. Anthony's encounter with this giant occurred during a fishing trip in the Gulf of Mexico. The mako put up an intense fight, leaping out of the water and displaying its impressive power. Capt. Anthony's experience and quick reflexes were crucial in successfully landing the shark. The Mako's sleek, muscular body and rows of sharp teeth were awe-inspiring, marking it as one of the most exhilarating catches of his career. In the realm of reef fishing, Capt. Anthony's catch of a 55-pound cubera snapper stands out. This impressive fish, known for its size and strength, was caught during a spearfishing adventure in the Caribbean. Cubera snappers are renowned for their elusive nature and powerful jaws, making them a challenging target. Capt. Anthony's patience and precision paid off when he speared the massive snapper, which required significant effort to bring to the surface. The vibrant colors and robust build of the cubera snapper made it a memorable and rewarding catch. These extraordinary catches highlight Capt. Anthony Del Valle's prowess as an angler and his passion for exploring the depths of the ocean. Each fish tells a story of adventure, skill, and respect for the marine environment, adding to the rich tapestry of his fishing career. Whether it's battling a massive marlin, outmaneuvering a swift mako shark, or spearing a powerful cubera snapper, Capt. Anthony's experiences are a testament to his dedication and love for the sport of fishing.
If you were cooking for all your friends what would you cook?
Capt. Anthony is not only known for his exceptional fishing skills but also for his culinary prowess, particularly his famous Wahoo burgers. These delicious creations have become a staple among his friends, family, and clients, celebrated for their fresh flavors and unique twist on a classic dish. The star of Capt. Anthony's Wahoo burgers is the freshly caught Wahoo, a prized fish known for its mild flavor and firm texture. This fish is often caught during his fishing expeditions, ensuring that the burgers are made from the freshest ingredients straight from the sea. To prepare the Wahoo burgers, Capt. Anthony starts by carefully cleaning and filleting the fish. The Wahoo is then finely chopped or ground, mixed with a blend of herbs and spices that enhance its natural flavor. Ingredients like garlic, parsley, lemon zest, and a touch of cayenne pepper are commonly used, adding a vibrant and slightly spicy kick to the patties. The Wahoo patties are carefully formed and then grilled to perfection. Capt. Anthony prefers grilling as it adds a smoky flavor that complements the fish beautifully. He ensures that the burgers are cooked just right, with a slightly crispy exterior and a juicy, tender interior. Capt. Anthony's Wahoo burgers are typically served on freshly baked buns, often sourced from local bakeries. He garnishes the burgers with crisp lettuce, ripe tomatoes, red onion slices, and a dollop of homemade tartar sauce or a zesty aioli. Sometimes, he adds a slice of avocado or a sprinkle of microgreens for an extra touch of flavor and presentation. What makes Capt. Anthony's wahoo burgers truly famous is not just the fresh, high-quality ingredients, but also the care and passion he puts into making them. Each burger tells a story of his adventures at sea and his love for sharing good food with good company. Whether enjoyed at a family gathering, a client appreciation event, or a casual dinner, Capt. Anthony's Wahoo burgers leave a lasting impression on all who taste them. In summary, Capt. We had an absolutely amazing time deep sea fishing with Captain Anthony! He is a fun and knowledgeable fisherman with LOTS of experience and great stories (ask him about how he’d dive for lobsters to impress his dates). He does all the work but lets you learn and participate as much or as little as you want. We knew we had an expert when we heard the radio chatter of all the other guides...

He is a fun and knowledgeable fisherman with LOTS of experience and great stories (ask him about how he’d dive for lobsters to impress his dates). He does all the work but lets you learn and participate as much or as little as you want. We knew we had an expert when we heard the radio chatter of all the other guides complaining that nothing was biting, while we pulled in six (only four mahi in pic). The other two were a small tuna and a ~32” barracuda). We highly recommend Kilo Whiskey Charter & Captain Anthony!
